I love customizing the dock on my Mac. But I have come to find a good application to do it with.
Swap My Dock lets you easily customize your dock to your enjoyment. Swap My Dock is a free application only for the Mac. Windows, of course, does not have a dock.

Make It Mine is a simple application for the iPhone/iPod Touch that lets you customize the carrier and banner text. It is only for jailbroken devices. You can find it in Cydia if you search the letters "MIM" (without the quotes)
